Client of ours requested a proposal for non-emergency medical courier service. This is new to me but we are in the transport business so I am trying to determine market rates, but many other services do not list theirs online. I am assuming I want to factor in time (wage), mileage (wear/tear, fuel, tolls, insurance), some sort of minimum charge or base rate, as well as an added margin. Do we factor in the return trip as well? In the other aspect of my business we are only paid loaded miles, so typically the return trip is not paid unless we find a loaded return that lines up perfectly.

Nor was I thinking I needed to use one of these services so I could learn how to cook. I already know how to cook. 60 off. I might as well give one a try. The first thing that surprised me about meal kit services is how many there are. You’ve probably heard of Blue Apron and Hello Fresh, but there are many more. I found meal delivery companies for every type of eater, from Dinnerly for the no frills, budget-conscious cook to Purple Carrot for vegans to Freshly for people who just want to get a prepared meal delivered and ready for microwaving.

This was welcome news, as I’m a bit of an ingredient snob. I wouldn’t say that I’m obsessive, but I enjoy knowing where my food comes from and how it’s grown. Sure, I eat plenty of conventional produce and factory-farmed chicken when dining at restaurants. But when I’m cooking at home, I try to use the best ingredients I can afford. So I focused on three services that advertise organic and sustainable ingredients and cater to people with special diets and diverse palates. They were Home Chef, Sun Basket and Green Chef. I also added a basic service — Hello Fresh — just for comparison.

I expected to like the convenience of having a week’s worth of meals planned for me and delivered to my doorstep. And for XDS the most part, those expectations were met. But it wasn’t the biggest benefit by far. In fact, at times, the delivery part was a drawback. Two of the services — Sun Basket and Green Chef — use a delivery company that favored dropping off the boxes at my back door. If I hadn’t gone out to take out the trash, I would’ve missed the boxes from these services. And twice, deliveries were delayed by a day due to the weather. That meant I had to scramble to throw meals together at the last minute, something I thought I’d be able to avoid by having a meal kit service. Also, all of the services warn that their deliveries may arrive as late as 8 or 9 p.m.

That never happened to me, but it’s worth noting if you’re planning to cook from the kit on the night the box arrives, because you may not get it in time for dinner. Another drawback: Sunday is my favorite day to cook, and most of the services only deliver on weekdays. Finally, sometimes you’ll get substitutions if the company runs out of a particular ingredient. One night, for example, Home Chef sent us broccoli instead of Brussels sprouts. It wasn’t a big deal for us, but if you don’t like the substitution, it’s a waste. Still, there was a lot to like about having chef-prepared recipes and ingredients delivered to my door. For one thing, I tend to cook the same meals over and over again.
